EARLY MORNING EGG BITES

  • INGREDIENTS

    • ½ cup Baby Greens Chopped
    • ½ cup Shredded Cheddar Cheese
    • 7 Large Eggs
    • ¼ cup Milk
    • Kosher Salt & Pepper
    • 1 Package Berbere Jerky
    • Parsley (optional)
  • RECIPE

    Preheat oven to 350 degrees. Prepare a muffin tin by coating generously with oil or nonstick spray. In a medium bowl mix eggs, milk, salt, and pepper to taste. Add about 1 tbsp of greens and a sprinkle of cheese to each muffin slot. Pour egg mixture in each slot leaving a little room at the top. Bake egg bites for 20 minutes. If the top is not fully cooked return to the oven cooking in 3-minute increments. Cut the jerky into bite sized pieces and add to the top of each egg bite with a little pinch of extra cheese and place back in the oven for 3 final minutes. Enjoy!
