Chef Jon Adams pairs his kitchen chops with the coffee roasting skills of boyhood friend and business partner, Damien Pileggi, to create an earthy and spicy homage to the Texas panhandle. Combining Rival Bros Whistle & Cuss blend with ingredients such as smoked paprika and balsamic vinegar, Adams and Pileggi replicate the flavors of burnt ends. Think sweet, smoky, earthy, and downright delicious.

NEW WAYS TO EAT JERKY

Like we say, live well and eat jerky. As a versatile high protein snack, Side Project Jerky can also be incorporated into dishes to create unforgettable flavor experiences. 

EGG BITES TOPPED WITH COWBOY JERKY

Ingredients:
½ cup Baby Greens Chopped
½ cup Shredded Cheddar Cheese
7 Large Eggs
¼ cup Milk
Kosher Salt & Pepper
1 Package Berbere Jerky
Parsley (optional)

Prepare a muffin tin by coating generously with EVO or nonstick spray. Preheat oven to 350 degrees F. In a medium bowl mix eggs, milk, salt, and pepper to taste. To each muffin slot, add about 1 tbsp of greens and a sprinkle of cheese. Pour over egg mixture to each slot leaving little room at the top. Bake egg bites for 20 minutes. If the top is not fully cooked return to the oven cooking in 3-minute increments. Cut the jerky into bite sized pieces and add to the top of each egg bite with a little pinch of extra cheese and place back in the oven for 3 final minutes. Enjoy!
